Ronnie's Notes
This is an all-purpose coffee cake that’s just right for those times when you want something plain for dessert or as a snack during the day. The Yogurt Sauce dresses it up a bit but the cake is fine just plain. I also make the Yogurt Sauce to use with fresh fruit when I want something extra, but simple and easy to make.
Instructions
Preheat the oven to 350°F.
Butter and flour an 8-inch square cake pan.
Whisk the flour, cinnamon, nutmeg, allspice, ginger, salt, baking powder, and baking soda in a bowl.
Place the sugar and butter in a large bowl and cream them with an electric mixer set at medium speed for or until they are fluffy and smooth.
Add the eggs one at a time, beating after each addition.
Beat in the yogurt.
Add the dry ingredients and blend them in thoroughly.
Pour the batter into the prepared pan.
Bake for or until a cake tester inserted into the center comes out clean.
Let the cake cool in the pan for then invert onto a cake rack to cool completely.
Serve plain or with ice cream, sorbet, or Yogurt Sauce.
Makes 8 servings.
