Yogurt-Cucumber Dip

Place the yogurt in a bowl.

Grate the cucumbers, press down on them through a strainer to extract as much liquid as possible, and add them to the yogurt.

Add the radishes, if used, the garlic, mint, dill, lemon juice and olive oil.

Stir to blend all the ingredients thoroughly.

Taste for seasoning and add salt if desired.

Serve with crudités or whole-wheat pita wedges.

Makes about 4 cups, serving 10-12 people.
