Wilted Kale with Sesame Dressing

Tips: Second Thoughts As an alternative to sesame seeds, sprinkle the kale with 1–2 TB. lemon juice or balsamic vinegar.

Instructions
Place the sesame seeds in an ungreased frying pan and cook them over moderate heat 3– or until they are lightly toasted.
(You may also toast them in an oven or toaster-oven preheated to 350°F.) Set the seeds aside.
Wash the kale leaf by leaf to rid it of all sand.
Remove any extra-large stems.
Bring a large soup pot of lightly salted water to a boil.
Add the kale to the boiling water and cook 4– or until the leaves have wilted and the stems have softened.
Remove the kale, drain it into a strainer or colander, and squeeze out as much of the liquid as possible.
Toss the kale with the vegetable oil and sprinkle it with the toasted sesame seeds.
