Wild Rice Fritters

An outstanding choice to serve with the Thanksgiving turkey.
Tips: Kitchen Clue Remember that when you reheat fried foods, you must put them in a single layer on a cookie sheet and bake in a preheated 400°F oven. For even better results, place the food on a rack.

Instructions
Mix the wild rice, white rice, and onion in a large bowl.
Beat the eggs and add them to the rice mixture.
Stir the mixture to combine the ingredients.
Stir in the flour, salt, and pepper.
Heat about 1/4 inch of vegetable oil in a large skillet.
When the oil is hot enough to make a tiny piece of bread sizzle around the edges, drop some of the wild rice mixture into the pan to form “pancakes” about 2–4 inches wide, depending on the size fritters you want.
Fry the fritters over moderate heat about 2– per side or until they are crispy and golden brown.
Drain on paper towels.
