Vegetables with Pinons

A wonderful side dish for any grilled meat, poultry or fish. If you want to spice it up, use a hot chili pepper instead of the Anaheim chili.

Instructions
Cook the pinons lightly in an unoiled skillet over moderate heat for , or until they are lightly brown.
Cook the green beans in lightly salted water for , or until barely tender.
Drain under cold water and set aside.
Heat the olive oil in the skillet.
Add the onion and Anaheim chili and cook for , or until they have softened.
Add the garlic and green beans and cook briefly to coat ingredients with the cooking oil.
Add the squash, sprinkle with salt and pepper and cook for , or until the ingredients are hot.
Add the pinons and toss the ingredients.
Sprinkle with the cheese and dish out into a serving dish.
