Unbelievably Rich Mashed Potatoes

Better make lots of this because every morsel will be gone. These mashed potatoes are lush and fluffy. If there is some leftover, shape it into small cakes, dredge them in some flour and fry them until crispy. Yum.

Wash, peel and cut the potatoes into chunks.

Cook them in lightly salted water until they are fork tender.

Drain the potatoes and add the butter and cream cheese.

Mash with a potato masher or ricer until there are no lumps.

Add enough sour cream to make a smooth, fluffy mixture.

Taste for seasoning and add salt and pepper to taste.

HOT TIP: Don’t use a food processor, blender or electric mixer because they turn potatoes into a gummy mess.
