Turkey Bean Soup

This hearty soup is a terrific way to use leftovers from Thanksgiving.

Instructions
Rinse the beans under cold water and place them in a soup pot.
Cover the beans with water, bring the water to a boil over high heat, and boil the beans for .
Remove the pan from the heat, cover the pan, and let the beans rest for one hour.
Drain the beans and return them to the pot.
Add 2 quarts of water, the turkey carcass, meat scraps, and bones.
Bring the soup to a simmer.
Add the tomatoes, celery, onion, garlic, blackening spices, salt, and fresh herbs (if used).
Simmer, partially covered, for .
Stir in the rice and cook, partially covered, for .
Taste the soup for seasoning and add salt to taste.
Remove the herb sprigs and turkey carcass.
Serve soup with fresh Parmesan cheese, if desired.
