Chop the tuna into very fine pieces into a bowl (you can use a food processor). Add the parsley, onion, garlic, ginger, chili pepper and some salt and pepper to taste. Stir ion 2 tablespoons vegetable oil. Heat the remaining vegetable oil in a saute pan over medium-high heat. Cook the burgers for per side or until lightly browned and crispy on both sides. Makes 4.

I served these on hamburger rolls with lemon-flavored mayonnaise: mix 1/4 cup mayonnaise with 1 teaspoon finely grated lemon peel.
