Ambrosia is an old-fashioned Southern fruit dessert that made its first appearance in American cookbooks in the last part of the nineteenth century. There were variations on the recipe but all included orange sections and grated coconut. This contemporary version also has mango and pineapple for the spicy, acidic flavors they offer, grapes for added color, and a faintly spicy-hot honey-lime dressing.
Instructions
Peel the mango and cut the flesh into chunks.
Place the chunks in a bowl.
Peel the orange and cut it into thick slices across the sections..
Remove the white pith from the outer edge and cut the oranges into chunks.
Add to the bowl.
Remove the shell, cut the pineapple into chunks, and add the pieces and the grapes and coconut to the bowl.
Toss the fruit.
In a small bowl blend the honey and lime juice and pour over the fruit.
Sprinkle with the cayenne pepper.
Toss ingredients.
Spoon into serving bowls.
Let rest for before serving.
Makes 4 servings.
