Tomato and Basil Bruschetta

Very refreshing—and you can also serve it as a first course.
Tips: Second Thoughts Fresh herbs are important in bruschetta. If you can’t find fresh basil, substitute 11/2 tsp. fresh thyme, oregano, or marjoram leaves. If you can’t find any of these, substitute 4 slices of crumbled crispy bacon.

Preheat the oven to 400°F.

Cut the tomatoes in half crosswise and squeeze out the seeds.

Chop the tomatoes and place them in a bowl.

Stir in the garlic, 2 TB.

of the olive oil, basil, cayenne pepper, and salt.

Slice the bread into 1/2“-thick slices.

Brush both sides lightly with the remaining oil.

Place the bread on a cookie sheet and bake the slices 3– or until they are slightly crispy but not browned.
