These are the most enduring cocktails; they never go out of style.

Tips: Second Thoughts Some people prefer their martini with a cocktail onion, a twist of lemon, or a tiny amount of chopped jalapeño pepper rather than the traditional martini olive. You can find cocktail onions in jars near the olives in your supermarket. You may create new versions of the martini if you like, substituting various brandies for the vermouth or adding crushed fresh ginger, raspberries, strawberries, and so on, to the cocktail shaker (strain into the cocktail glass). Second Thoughts You can give the popular Bloody Mary a little more oomph if you use V-8 juice or clam-flavored tomato juice.

Put ice cubes into a cocktail glass.

Add the vermouth and the gin or vodka in the proportions given.

Add an olive.

Add ice cubes if desired.

Sprinkle the cocktail with some freshly ground pepper and garnish with the celery stick.

Margarita 1 jigger tequila (11/2 oz.

or 3 TB.) 1/2 oz.

triple sec, or any orange-flavored liqueur (1 TB.) 1 oz.

fresh lime juice (2 TB.) ice cubes lime quarter salt, preferably Kosher (coarse) salt Combine the tequila, triple sec, and lime juice with some ice cubes in a cocktail shaker.

Shake vigorously to combine the ingredients.

Moisten the rim of a cocktail glass with the lime quarter, then press the rim into some salt.

Pour the beverage into the salted glass.
