My grandson Zev once put on pajama bottoms that had polar bears on them; the tops had stars and stripes. When asked why he combined the two he said he wanted to wear the “grand finale, you know when all the fireworks happen at the end of the show.” These cookies are like that. Inspired by a recipe of Laura Bush, they combine oatmeal raisin cookies and chocolate chip cookies and there’s also a bit of coconut just for fun. A truly grand finale to any meal. I always keep a batch in the freezer and when I run out of them everyone complains until I bake another batch.
Instructions
Preheat the oven to 350°F.
Mix the flour, baking soda, baking powder, cinnamon, and salt in a bowl.
Combine the butter, brown sugar, and sugar in a large bowl and beat them with an electric mixer set at medium speed for or until creamy and well blended.
Add the egg, orange juice, and vanilla extract and beat them in thoroughly.
Stir in the flour mixture until just combined.
Stir in the oats, chocolate chips, coconut, almonds, and raisins.
Scoop blobs of dough about 2 inches in diameter and place on lightly greased cookie sheets.
Bake for 15– or until browned.
