If you’re bored with regular meatloaf, try this version with a spicy southwestern taste. The classic meatloaf accompaniment is Mashed Potatoes. Add a green vegetable to round out the meal.
Tips: Second Thoughts For traditional meatloaf, combine the meat (or use a combination of 1 lb. ground round or chuck, 1/2 lb. ground pork, and 1/2 lb. ground veal) with the salt, pepper, eggs, and breadcrumbs. Stir in ½ cup ketchup, a small, chopped onion and 2 tsp. Worcestershire sauce and proceed with the recipe.

Instructions
Preheat the oven to 350°F.
Combine all the ingredients in a large bowl.
Put the mixture in a 9´ 5”´3” loaf pan.
Bake it about 50–, or until the meatloaf is well browned and begins to pull away from the sides of the pan.
If you don’t have a loaf pan, you can make a free-standing meatloaf: Shape the meat into an oval and bake it in a jelly roll pan.
