Sweet Onion and Tomato Salad

This is a beautiful salad that takes just a few minutes to make. It goes well with just about any grilled meat, fish or poultry as a side dish – or serve it as a first course.

Combine the olive oil, red wine vinegar, Worcestershire sauce, Dijon mustard and some salt and pepper to taste.

Set aside in a bowl.

Place two lettuce leaves on each of four plates.

Slice the tomatoes and arrange them over the lettuce.

Peel and thinly slice the onion and arrange them over the tomatoes.

Sprinkle with the crumbled Gorgonzola cheese.

Mix the dressing ingredients and pour over the salads.

Sprinkle with parsley and serve.
