Cut the baby bok choy into quarters lengthwise.

Rinse the stems and leaves, shake off excess water and set aside.

Heat the vegetable oil in a sauté pan over medium-high heat.

Add the bok choy and cook, stirring frequently, for , or until they start to brown lightly.

Add the ginger, garlic and cashews and continue to cook, stirring frequently, for another or until the bok choy is wilted and browned.
