Shaker Brown Sugar Meringue Pie
Instructions
Combine the rhubarb, brown sugar, salt and flour in a bowl, toss ingredients and let stand for .
Add the egg yolks and lemon juice and mix thoroughly.
Pour the ingredients into the pie shell.
Cut the butter into small bits and place them on top of the rhubarb mixture.
Bake in a preheated 400 degree oven for .
Reduce the heat to 350 degrees and bake another .
Remove pie from the oven.
Beat the egg whites until soft peaks form.
Add the cream of tartar and beat it in.
Still beating, gradually add the sugar and continue beating until the mixture stands in stiff, glossy peaks.
Stir in the vanilla extract.
Spread the meringue on top of the pie, making sure to extend it to the crust (otherwise the meringue will shrink).
Return the pie to the oven and bake another or until the meringue is golden brown on the surface.
