Place beans in a soup pot, cover with water and bring to a boil.

Remove from the heat, cover the pan and let rest for one hour.

Drain the beans.

Return beans to the pot, add 3 quarts of water, bring to a boil, lower the heat to a simmer and cover the pan.

Cook for 1-1/ or until beans are tender.

While the beans are cooking, peel the potatoes, cut them into pieces and cook them in lightly salted water for or until they are tender.

Drain the potatoes and mash them.

Set the potatoes aside.

When the beans are tender, add the mashed potatoes to the soup with all other remaining ingredients except salt and pepper.

Cook for one hour.

Remove the ham hock and discard the bone.

Cut the meat into small pieces and add it to the soup.

Taste for seasoning and add salt and pepper to taste.
