Clean and dry the mushrooms and cut them into bite-size pieces.

Heat the olive oil and butter in a skillet.

When the butter has melted and looks foamy, add the mushrooms and cook over moderate heat for 4–, or until the mushrooms begin to brown and the liquid in the pan has evaporated.

Sprinkle with the parsley, salt, and pepper.
