Place the cutlets in a glass, ceramic or stainless steel dish.

Sprinkle with some salt and cayenne pepper, lime juice and olive oil.

Marinate the cutlets in the refrigerator for at least one hour.

Prepare the Salsa: combine the mangoes, avocado, jalapeno pepper, purple onion, cilantro, lime peel and garlic and toss ingredients gently.

Mix in the lime juice and olive oil.

Refrigerate until about a half hour before serving time.

Preheat an outdoor grill or oven broiler.

Grill or broil the cutlets for per side or until they are cooked through.

Serve hot or warm with the salsa.
