Salmon Burgers

Chop the salmon into tiny pieces and place in a bowl.

Add the scallions, lemon juice, mustard, horseradish, bread crumbs, and salt and pepper to taste.

(Alternatively, cut the fish into chunks and process the ingredients briefly in a food processor using on-off/pulse until the fish is chopped).

Shape into four 3/4-inch to 1-inch thick patties.

Heat the olive oil and butter in a sauté pan over high heat.

When the butter has melted and looks foamy, turn the heat to medium and add the burgers.

Cook for about 2– per side, or until brown and crispy.

Serve on buttered, toasted bread with equal amounts of Lemon-Chive Mayo.
