Wash the potatoes, and then steam them (or cook them in lightly salted water) for 10– or until they are tender.

Drain the potatoes under cold water.

Let the potatoes cool.

Peel the potatoes and cut a thin slice from the bottom of each one so that it can stand up straight.

With the tip of a spoon or melon-baller, scoop a small amount of potato from each potato top to make a crater.

Fill each crater with sour cream and top the sour cream with a small amount of caviar.
