Preheat the oven to 475 degrees.

Cut the lemon into thin slices and place them in a single layer in a baking dish.

Place the salmon on top.

In a small bowl, combine the olive oil, horseradish, scallions and mint.

Spread this mixture on top of the fish.

Sprinkle with salt and pepper.
