Halibut is a firm white fish and has lots of flavor that stands up well to bold seasonings. You can mix the herb and spice mixture in this recipe in a matter of minutes, making this recipe a blessing on a truly busy day. Substitute fish include cod, haddock, grouper, and perch. Serve this with Stir-Fried Fennel (page xx) or Crisped Cauliflower with Raisins and Pine Nuts (page xx).

Preheat the oven to 450°F.

Mix the olive oil or butter with the garlic, parsley, basil, paprika, oregano, salt, cayenne, lemon juice, and lemon peel until well blended.

Spread the mixture on both sides of the fish.
