RF: I referenced the “Something Simple” because it isn’t in the Vegetables or Pasta, Rice and Grain sections and I couldn’t think of another way to tell readers there is a recipe for this.
Tips: Second Thoughts This basic dish can stand all sorts of variations. Try adding 2 tsp. caraway seeds to give the pork an unusual flavor and crunchy texture. You might also include 11/2 tsp. of chopped fresh rosemary (or 1/2 tsp. dried) in the seasoning mixture or spread 1/4 cup orange marmalade or apricot jam on the roast for the last 15 minutes of cooking.

Instructions
Preheat the oven to 450°F.
Wipe the meat dry with paper towels and place it in a roasting pan.
Combine the remaining ingredients in a small bowl.
Spread this mixture on the top surface and part of the sides of the meat.
