Tips: Second Thoughts You can leave out the ham if you wish. Whether or not you do, try a few of these ingredients: • 1/2 chopped red pepper • 8 cooked, cut-up shrimp • 1 cup thawed frozen corn kernels • 1 chopped, deseeded tomato

Mix the rice, peas, and ham in a bowl.

Mix the olive oil, wine vinegar, Dijon mustard, salt, and pepper in a second bowl.
