Tips: Kitchen Clue Here are some tips for better burgers: • If you like your burgers very rare, mix 1 TB. of ice shavings into each patty to keep the meat cold. • Never press down on a burger when it cooks; this releases necessary natural fluids. • Turn the burgers with a rigid spatula for easier handling.

Instructions
Mix the meat, salt, pepper, and Worcestershire sauce, if used.
Shape the meat into four patties about 4”–5” in diameter.
Preheat a broiler, grill, or a skillet set over high heat.
(If you panfry the burgers in the skillet, brush the bottom of the pan with a film of butter or vegetable oil.) Broil, grill, or fry the patties for per side.
Reduce the heat to moderate and cook the burgers, turning them once, another 3–, depending on the degree of rareness you like.
Serve the burgers on buns, topped with onion, tomato, and pickle.
Spread the roll with the condiment of your choice.
