Preheat the oven to 450°F.

Place the lamb in a roasting pan.

Brush with the mustard.

Sprinkle with the lemon peel, coriander, garlic, and cilantro.

Scatter the bread crumbs on top.

Roast for 25–, depending on how well-done you like your meat: a meat thermometer will read 120–125°F for rare and 135–140°F for medium.
