Quick Three-Bean No-Meat Chili

A popular vegetarian dish. For extra nourishment, serve it with cooked rice.
Tips: Kitchen Clue If you prepare this dish a day or two ahead, the beans may absorb some of the moisture in the sauce. When you reheat it, stir in about 1/2 cup water.

Instructions
Heat the olive oil in a large skillet.
Add the onions and garlic and cook them over moderate heat 3– or until they have softened.
Add the carrots, tomato sauce, water, tomato paste, garbanzo beans, kidney beans, lentils, potatoes, chili powder, chili peppers, and basil.
Bring the ingredients to a boil over high heat.
Lower the heat and simmer , covered.
Remove the cover and cook another , or until sauce surrounding the beans has thickened to a gravy-like consistency.
Stir occasionally during this time.
