Beat the eggs and sugar together until the mixture is light anf fluffy.

Add the pumkin, cinnamon, salt, baking powder, lemon rind and butter.

Add the flour a half cup at a time until a soft, sticky dough has formed.

Turn the dough onto a floured surface and knead 4-5 times.

Press or roll dough to 1/2" thickness.
