This dish is a special Christmas dinner in parts of the Southwest. If you like your food very spicy, add a few more dried chili peppers.

Heat the olive oil in a large saucepan or Dutch oven over medium heat.

Add the meat a few pieces at a time, and cook until lightly browned.

Remove the meat.

Add the onions and cook for .

Add the garlic, chili peppers, oregano and cumin.

Stir ingredients.

Return the meat to the pan.

Pour in the stock.

Bring to a boil over high heat, reduce the heat, cover the pan and simmer for one hour.
