Orange peel and cloves infuse a spicy-citrusy quality to this salad. It’s a particularly refreshing dish that I have served many times and have used for parties. Sometimes I mix in dried blueberries or cranberries. If you use dried blueberries, let them soak for about 15 minutes to plump them up.

Place the olive oil, orange peel, and cloves in a saucepan and cook over medium heat for .

Set aside to cool.

When cool, remove and discard the orange peel and cloves.

Cook the orzo according to package directions, drain the pasta and put it in a bowl.

Add the chicken, raisins, mango, and cilantro and toss the ingredients.

Pour in the flavored olive oil and lime juice and toss the ingredients.

Season to taste with salt and pepper.
