A good, savory opener for any dinner. It has a bit of a bite, thanks to the cayenne pepper. Herb croutons add some textural crunch; you can buy the packaged kind. Use a good, sharp cheddar for this potage.

Heat the vegetable oil and butter in a soup pot over moderate heat.
