Old Fashioned Wisconsin Cheddar Cheese Soup

A good, savory opener for any dinner. It has a bit of a bite, thanks to the cayenne pepper. Herb croutons add some textural crunch; you can buy the packaged kind. Use a good, sharp cheddar for this potage.

Instructions
Heat the vegetable oil and butter in a soup pot over moderate heat.
Add the onion and celery and cook for .
Stir in the flour, salt, mustard and cayenne pepper and cook longer, stirring frequently.
Gradually add the stock and stir, being sure to dissolve the flour.
Add the water and Worcestershire sauce.
Bring the soup to a simmer and cover the pan.
Cook the soup .
Add the milk and bring the soup to a simmer.
Gradually add the cheese, stirring to incorporate it and let it melt before you add more.
Serve the soup plain or with herb croutons.
