Oat Bran Muffins

These muffins were hot stuff when scientists said oat bran could lower blood cholesterol levels. But the best reason to eat them is the flavor. Oats are sweet and nutty tasting. These are great for breakfast. You can freeze them for months in plastic bags.

Instructions
Preheat the oven to 400 degrees.
Lightly grease 10-12 muffin tins.
In a bowl, combine the oat bran, flour, salt, baking powder, baking soda, sugar and cinnamon or lemon peel.
In another bowl, mix the vegetable oil, eggs and buttermilk until the liquid is well-blended.
Pour the liquid into the flour mixture and stir only to blend ingredients.
Do not overmix.
Fold in chopped apple, if used.
Spoon the batter into the muffin tins.
The tins should be 2/3 full.
Bake for or until puffed and golden brown.
