Mulled wine tastes and smells wonderful on a cold, wintry day.

Tips: What Is It? You need a nonreactive saucepan because the acid in the wine could corrode metals that react with acid. Stainless steel, glass, ceramic, and porcelain are nonreactive materials that will not corrode.

Combine the wine, water, sugar, currants, golden raisins, half orange, half lemon, cinnamon sticks, cloves, and allspice in a stainless steel, enameled, or other nonreactive saucepan.

Strain the liquid into a chafing dish or other heated serving vessel.

(Alternatively, you may combine the cinnamon sticks, cloves, nutmeg, and allspice in a small muslin pouch or a piece of cheesecloth tied with kitchen string or a bag tie, and immerse the bag into the liquid, removing the bag to strain the brew.) Garnish the beverage with a few orange slices.
