There are few foods quite as delicious as a fresh, ripe summer tomato. You can eat it out of hand, giving it a sprinkle of salt—or not! Tomatoes are also wonderful vehicles for certain vegetables and herbs: lettuce and basil are well known, but scallions and mint offer a sensational refreshing quality. This salad is especially good with grilled meats.
