Place the bulgur wheat in a bowl and cover with the water.

Let rest for until all the water is absorbed.

Add the turkey, onion, garlic, carrot, apple, eggs, parsley and salt and pepper to taste.

Shape the mixture into meatballs about 1-1/2 inches in diameter.

Place the meatballs on a lightly oiled cookie sheet (or on parchment paper).

Chill the meatballs in the refrigerator for .

Preheat the oven to 400 degrees.

Place the meatballs in the oven and roast for or until cooked through.

These are wonderful in a sandwich: crusty roll, Dijon mustard and meatballs; or over mashed potatoes or a bed of caramelized onions.
