Macerated Pineapple with Chips

Really easy to make and powerfully flavorful! Hawaiian pineapples are the best to use; they are sweet and juicy.

Cut the pineapple in half, keeping the leaves intact.

Cut the flesh out of the pineapple shell with a small knife.

Use a spoon to scoop portions you don't reach with the knife.

Reserve the pineapple shells.

Cut away and discard the hard core in the center of the flesh.

Cut the pineapple flesh into bite sized pieces.

Place the pineapple pieces in a bowl and add the confectioner's sugar, orange flavored liqueur and rum or brandy.

Toss the fruit to dissolve the sugar.

Macerate the fruit at least one hour in the refrigerator.

Before serving, put the fruit and accumulated juices back into the reserved pineapple shells.

Whip the cream and sugar together until the mixture is thick enough to stand in peaks.

Put equal amounts of the whipped cream on top of the two pineapple halves.

Garnish with the chips.

HOT TIP: Macerate is similar to marinate, but is the term used for fruits and vegetables rather than meat.
