Macaroni and Cheese

This tangy, creamy dish is an American classic. You can eat it immediately after mixing the macaroni and sauce, or make it into a baked, crispy-topped casserole.

Instructions
Cook the macaroni in lightly salted water until it is al dente.
Drain and set aside.
While the macaroni is cooking, heat the butter in a saucepan over low heat.
When the butter has melted and looks foamy, add the flour and cook, stirring constantly, (preferably with a whisk) for .
Gradually add the milk, stirring almost constantly for , or until the sauce has thickened.
Stir in the salt, pepper and nutmeg.
Add the cheese and continue to cook, stirring occasionally for , or until the cheese has melted and the sauce is thick and smooth.
Pour the sauce over the cooked macaroni and mix thoroughly.
Serve immediately.
For baked macaroni and cheese: preheat the oven to 350 degrees.
Place the macaroni and cheese in a baking dish.
Combine 1-1/2 cups of fresh breadcrumbs and 3 TB.
melted butter.
Mix with your fingers and sprinkle over the macaroni.
Bake for or until crust is golden brown.
