This is a good all-purpose sauce for meats, poultry, fish, and vegetables. I also use it as a spread for sandwiches.

Place the tahini, lemon juice, parsley, garlic, and salt in a blender or food processor and blend until smooth and creamy.

With the motor still running, gradually add 4–6 tablespoons water, using enough to make a thick, smooth sauce.
