Preheat the oven to 400°F.

Lightly grease a cookie sheet.

Sift the flour, baking powder, salt, and baking soda into a bowl.

Cut the butter into chunks and add the chunks to the flour mixture.

Work the fat into the flour mixture using your fingers, a pastry blender, or two knives until the ingredients resemble crumbs.

Add the buttermilk and gather the ingredients with your hands or a large wooden spoon to make a soft ball of dough.

Lightly flour a pastry board or a clean work surface.

Knead the ball of dough on the floured surface 10–12 times to make the dough slightly smoother.

Press the dough or roll it to 1/2" thickness.

Use more flour on the board if the dough sticks.

Cut out 10–12 circles with a cookie cutter or the top of a glass.

You will have to reroll the dough to get the last 2 or 3 circles.

Place the circles on the cookie sheet 1 inch apart for crisper, darker biscuits or closer together for fluffier, lighter biscuits.

Bake or until the biscuits have risen and are browned on top.
