Ronnie's Notes
This is another recipe given to me by my friends Judith Roll and Rebecca Martin, from the Sweet On You Bakery & Café at the JCC in Stamford, Connecticut. It’s a large, filling sandwich that will satisfy the hungriest person in your house. I like it with more chipotle in adobo sauce, but if you prefer milder foods either leave the chipotle out or just use a little of it.
Instructions
In a food processor, combine the mayonnaise, chipotle in adobo sauce, lime juice, cilantro, and salt and pepper to taste.
Process until well blended.
Spread equal amounts of the sauce on each tortilla.
Lay the mushroom slices in a single layer on top of the sauce.
Top with slices of cheese, tomato, and avocado.
Fold the tortilla like a burrito (fold top and bottom over the ingredients, then fold both sides in to make a fully enclosed package).
Heat a griddle, cast iron pan or nonstick pan over medium heat.
Pour in a small amount of oil.
Place the wraps in the pan and cook for per side or until lightly browned and the cheese is melted.
Makes 4 sandwiches.
