How to Roast Chicken

So simple, yet so impressive. Roast chicken is suitable for family or company meals. Like other chicken dishes, this one goes well with almost any vegetable or starch, but try it with Wild Rice Fritters, Nana’s Egg Noodle Stuffing, or Rice and Fruit Stuffing .
Tips: Kitchen Clue Generally speaking, chicken takes about 22 minutes per pound to roast all the way through.

Instructions
Preheat the oven to 400°F.
Remove the plastic bag of giblets from inside the bird.
Wash the giblets and out them in the roasting pan, if you want to eat them.
Otherwise, freeze them for when you want to make stock.
(See the “Soups” recipe section for a stock recipe.) Wash the chicken inside and out.
Place the chicken on a rack in the roasting pan.
Rub the surface with the vegetable oil or melted butter.
Sprinkle the chicken with salt, pepper, garlic (or garlic salt), and paprika.
You don’t need to measure these ingredients; just dust the surface with them.
If you use garlic salt, use slightly less regular salt in the recipe.
Place the chicken breast-side down on the rack.
