How to Broil or Grill Chicken

This is one of the more basic recipes in a home cook’s repertoire, and you can keep changing it to create endless recipes. Serve with any green and yellow vegetable, wild rice or Rice Pilaf with Mushrooms.
Tips: Second Thoughts Consider these variations: • Sprinkle the chicken with 2 TB. chopped, fresh rosemary or 2 tsp. dried, crushed rosemary. • Coat the chicken with 2 TB. Dijon mustard along with the other ingredients. • Before broiling, marinate the chicken parts in vinaigrette dressing for 30 minutes. • Marinate the chicken in 1 cup plain yogurt plus 1 tsp. ground ginger, 1/2 tsp. cinnamon, 1/2 tsp. ground cumin, 1/2 tsp. salt, and 1 minced garlic clove before broiling.

Instructions
Preheat the broiler or grill.
Wash and dry the chicken parts.
Place the parts on a rack in a broiler pan.
Rub the surfaces with the vegetable oil or melted butter.
Sprinkle the chicken with salt, pepper, garlic powder (or garlic salt), and paprika.
You don’t need to measure these ingredients; just dust the surface with them.
If you use garlic salt, use slightly less regular salt in the recipe.
