Hangtown Fry

Instructions
Dredge the oysters in the flour and shake off the excess.
Coat with beaten egg.
Mix the cracker crumbs, salt, pepper and paprika in a small bowl and cover the egg-coated oysters with this mixture.
Heat the vegetable oil in a small skillet and fry the oysters over moderate heat or until they are crispy on both sides.
Drain the oysters on paper towels.
Heat the butter in a cast iron or other heavy skillet over moderate heat.
When the butter has melted and looks foamy, add the eggs.
As the eggs begin to set at the edges after about a minute, stir the mixture gently with a fork, bringing hardened edges toward the center to allow uncooked egg portions to reach the heat at the bottom of the pan.
When the eggs are partially set, add the oysters, press them in gently, sprinkle chives over the ingredients and continue to cook until the eggs have set completely.
Dish out onto a serving platter and surround with cooked bacon.
