Grilled or Broiled Salmon with Pineapple-Mango Salsa

There’s a lot to love about salmon. It’s fatty but not gamy and it has a mild but distinctive flavor. Its lovely color shows up well on a dinner plate. It’s also healthy because it’s loaded with omega-3 fatty acids, which are beneficial to the heart. For home cooks there’s another big bonus—it doesn’t take much to enhance plain old salmon: flavor it with a marinade or a fragrant rub or serve it with a relish, compound butter, or salsa.
Instructions
Place the pineapple, mango, red onion, mint, ginger, and chili pepper in a bowl and toss ingredients to distribute them evenly.
Add the lime juice and honey and mix well.
Sprinkle with salt.
Let rest for at least .
Preheat an outdoor grill or oven broiler with the rack about 6 inches from the heat source (or use a grill pan).
Brush the fish all over with olive oil and sprinkle with salt and pepper.
Place the fish flesh-side down, cover the grill or pan, and cook for .
Gently lift the fish with a rigid spatula, taking care not to break the flesh.
Turn the fish over.
Cook, covered, for an additional 5–, depending on thickness of fish and degree of doneness desired.
Serve with the salsa.
