Place the cheese on one of the bread slices.

Top with the roasted pepper and avocado slices.

Scatter the arugula leaves on top.

Cover with the remaining bread.

Place half the butter and olive oil in a sauté pan (preferably nonstick) over medium heat.

When the butter has melted and looks foamy, place the sandwich in the pan, cover and cook for .

Lift the sandwich with a rigid spatula and add the remaining olive oil and butter to the pan.

Let the butter melt.
