Separate the breasts at the center and cut away excess fat and cartilage in the center.

Flatten the breasts with a mallet or the flat side of a cleaver.

OR, use thin-sliced chicken breasts.

Combine the remaining ingredients and dredge the chicken in this mixture.

Grill in an indoor grill, outdoor grill or broiler for per side or until cooked through.

NOTE: these may be sauteed as well; you may dredge the chicken in flour first to obtain a slightly crispier coating.
