Grilled Chicken Waldorf Salad

Preheat an outdoor grill or oven broiler.

Trim the fat and cartilage from the chicken breasts, rinse and dry them.

Rub the breasts with the olive oil and sprinkle with salt and pepper.

Grill the chicken over moderate heat for , depending on the thickness, or until it is cooked through.

Turn the chicken occasionally.

Remove the chicken and cut it into dice.

Combine the chicken, celery, apples, walnuts and tarragon and toss the ingredients.

Moisten with mayonnaise.

To make regular Waldorf Salad, eliminate the chicken and tarragon; cut down on the mayonnaise.
