For grilled cheese lovers, here’s another easy recipe. The texture of ripe, juicy pear is a terrific partner for any of the cheeses recommended; the fruit’s sweet edge is a nice contrast to the sharpness of the cheese and the sweet spices and cayenne pepper play off each other as well. You can make the sandwich on any kind of bread but multigrain’s nutty flavor and uneven texture make it the most interesting.

Butter both sides of each slice of multigrain bread.

Cover two of the slices with equal amounts of cheese.

Slice the pear and place on top of the cheese.

Sprinkle each open sandwich with a pinch of nutmeg, cinnamon, ginger, and cayenne pepper.

Place the second buttered slice of bread on top.

Heat a sauté pan over medium heat and add the sandwiches.

Fry for 2– per side or until golden brown.

Makes 2 sandwiches.
