Here are two recipes for the famous sandwich. First, my Mom’s version, the one I grew up on. It is open-faced and broiled, and she frequently topped the cheese with bacon and tomato. Following that is the more well-known, two-sided, pan-fried classic. Mom’s Grilled Cheese with Tomato and Bacon
Prep time: less than 15 minutes

Instructions
Preheat the broiler.
Place the white bread on a piece of aluminum foil.
Smear the bread on one side with the butter.
Cover with the cheese.
Place the tomato on top.
Place the sandwich on a broiler pan set 4”away from the heat source.
Broil for a few minutes until the cheese is melted and bubbly.
For the last minute, place the bacon on top.
(The sandwich may be cooked in a toaster oven, using top-brown feature.) Classic Grilled Cheese Makes one serving Prep time: less than 2 slices white bread 1-1/2 TB.
softened butter 3-4 slices American cheese Butter both slices of bread on the outside with the butter.
Place the cheese between the two dry sides of bread.
Place the sandwich in a small frying pan, cover the pan and cook over low-moderate heat for , or until the bread has browned.
Turn the sandwich over and cook until browned.
